Brewing by "Jusui jikomi", which is a old traditional brewing method from Edo period. it means less water is used than modern brewing methods to make the sake stronger. It is a sweet sake, but the acidity is clean and not too strong, in fact, it is refreshing and light. It also suitable for any temperature.
