Introduction:
The /300 Project is a thirty-year endeavor for the production of a special type of sake known as "Ame-dare-ishi wo tsukutsu ki-jo-zake." This process begins by substituting "Ame-dare-ishi wo tsukutsu ki-jo-zake" for water in the brewing, and then utilizing the resultant brew in each successive year's production.
