Flavor and brand vision
Kanemitsu is a hyper local brewery that highly values local market, sources, and Santoka (Poet, native of Hofu, loved sake). It offers traditional, rich flavors with rice-centric sake brewed in a collaborative environment without a head brewer/toji.
Ingredients
All Yamaguchi grown rice except for occasional Omachi tanks.
Recommended temperatures and pairing
This is a very traditional brewery, so it pairs well with traditional Japanese dishes (oden, fish nikomi, teriyaki, etc.). Lower levels (junmai) are good warmed, while ginjo class should be drunk room temp or lower.
