新谷酒造是山口縣內規模最小的酒造,全年集中釀製少批量清酒。
Shintani Shuzo is Yamaguchi’s smallest brewery, and focuses on brewing small-batch sake year-round.
材料 / Ingredients
水源採自酒造附近河流的地下水,米則是全部來自山口縣內。新谷酒造與其中一個位於山口市德地町內的農家簽訂了合作協議,所有山田錦米均是由此農家提供的。
Water is sourced from the underground flow of the nearby river, while rice is primarily sourced from Yamaguchi. The brewery has a direct contract with a local farmer in the Tokuji region of Yamaguchi city for Yamadanishiki rice, as well.
