Techniques and style
Shintani Shuzo is Yamaguchi’s smallest brewery, and focuses on brewing small-batch sake year-round.
Water is sourced from the underground flow of the nearby river, while rice is primarily sourced from Yamaguchi. The brewery has a direct contract with a local farmer in the Tokuji region of Yamaguchi city for Yamadanishiki rice, as well.
Recommended temperatures and pairing
It’s clean acidity goes well with richly flavored dishes like braised pork belly.
